Here is the recipe for my favorite cheese sauce alternative. I grew up in a vegan family and we’ve perfected this cheese sauce recipe over many years. We’ve put it on macaroni. We’ve used it as a spread for bread. My favorite way to eat this mock-cheese sauce is drizzled it over steamed veggies. Yum! It tastes so good.

To get started making this sauce, make sure you have a good blender. Personally, I’m partial to the Vitamix. It has ten speeds and a powerful motor. I feel this blender works well because it gives the cheese sauce a rich creamy smoothness.
Put a couple cups of cashew nuts in the blender. The cashew nuts I use are not roasted. They are raw, unsalted. Not that there is anything wrong with roasted cashews but those are for eating, not for making sauces. The raw cashew nuts work well as a base.
Add four tablespoons of Nutritional Yeast Flakes. This can be found in health stores and bulk sections of super markets. It can also be ordered online from various websites such as Amazon.
Add onion powder, garlic powder, lemon juice salt and pimentos. Add half of the water and start the blender on a low speed. Increase speed and blend thoroughly. Add water as needed. Blend for three to five minutes. This results in the smoothest texture.
If desired, you can substitute vinegar for the lemon juice. Also I sometimes use a small chunk of fresh onion or garlic instead of the powdered stuff. The pimentos are mostly for color and can be replaced with a bit of tomato paste, but I don’t care for it that much. I feel it does affect the taste in some small way.

Vegan No-Bake Cheese Sauce
2 Cups Cashew Pieces
4 Tablespoons Food-Grade Nutritional Yeast
2 Teaspoons Onion Powder
1/2 Teaspoons Garlic Powder
2 1/2 Teaspoons salt
4 Tablespoons Lemon Juice (or sub. 2 T White Vinegar)
4 oz Pimentos
1 3/4 Cups Water
Combine dry ingredients in a blender. Slowly add wet ingredients while blending. Blend on high for 3-5 minutes, or until creamy. If the sauce tastes gritty, it needs to be blended for longer. Grittiness is easier to eliminate by blending with less water at first, then adding more water after grittiness is eliminated.
Serve over lightly steamed veggies or pasta. Keep separate from pasta when refrigerating. After pouring over pasta, eat immediately. If it is left on pasta for a long time before eating, it will dry out.
